Chitosan from Squid Gristles Chitosan can be devided into 3 categories according to its structures:
♦ α-chitosan extracted from shrimp and crab shells
♦ β-chitosan extracted from marine molluscs
♦ γ-chitosan extracted from insect shells
The molecular chains of β-chitosan are parallel, which is different from the antiparallel α-chitosan. Usually, β-chitosan is known to have higher biochemical activities, while the structure of α-chitosan is most stable.
